  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 2 tablespoons all purpose flour
  • Gel food coloring in assorted pastel colors (pink, purple, blue, yellow)
  • 4 ounces white chocolate (for optional ganache or decorations)
  • 1/4 cup heavy cream (for white chocolate ganache)
  • 1 cup heavy cream, chilled (for whipped topping)
  • 2 tablespoons powdered sugar (for whipped topping)

How to Make this

1. Preheat oven to 325 F. Butter a 9 inch springform pan and line the bottom with parchment. In a bowl combine 2 cups graham cracker crumbs, 1/4 cup granulated sugar and 6 tablespoons melted butter; press firmly into the bottom of the pan and chill while you make the filling.

3. Add 4 large eggs one at a time, mixing just until combined after each, then blend in 1 cup sour cream, 1/2 cup heavy cream and 2 tablespoons all purpose flour until smooth. Do not overmix.

4. Divide the batter into 4 small bowls and tint each with gel food coloring to create pastel pink, purple, blue and yellow. Pour or spoon colored batters into the crust in rings or random patches for a unicorn swirl effect, then gently run a knife through the top to create soft marbling.

5. Prepare a water bath by wrapping the springform pan base with heavy duty foil to prevent leaks and place the pan in a larger roasting pan. Pour hot water into the roasting pan until it reaches about halfway up the sides of the springform.

6. Bake at 325 F for 55 to 70 minutes until the edges are set and the center still slightly jiggles when tapped. Turn the oven off, crack the door and let the cheesecake cool in the oven for 1 hour to reduce cracking.

7. Remove from the water bath, run a knife around the pan to prevent sticking, and refrigerate the cheesecake at least 6 hours or preferably overnight to fully set.

8. For optional white chocolate ganache warm 1/4 cup heavy cream until steaming and pour over 4 ounces chopped white chocolate; let sit 1 minute then stir until smooth. Cool slightly and drizzle over the chilled cheesecake or use to make decorations.

9. Whip 1 cup chilled heavy cream with 2 tablespoons powdered sugar until soft peaks form; pipe or spread the whipped topping on the cheesecake and decorate with assorted rainbow sprinkles and edible glitter or luster dust.

10. If desired shape fondant or modeling chocolate into a unicorn horn and ears, attach on top with a dot of ganache or whipped cream, add extra sprinkles and serve chilled.
